The qualitative assessment of olive oil is based on its production method, on the degree of acidity and on basic organoleptic characteristics: taste, aroma and colour. Greek olive oil excels to the above characteristics compared to the olive oil produced in other Mediterranean countries. In contrast also with other countries, Greece is redundant in Extra Virgin Olive Oil.
